Rebecca’s Maple & Cinnamon Oatmeal Cookies

20140219_100202These cookies were a great excuse for Rebecca to use up some of that huuuuge bottle of maple syrup her dad gave to her.


  • 3 and 1/4 cups rolled oats
  • 1 cup of flour
  • 1 tsp fine sea salt
  • 1/4 tsp baking soda
  • 2 tsp cinnamon
  • 12 tbsp unsalted butter, softened
  • 2/3 cup of dark brown sugar
  • 1/2 cup of white sugar
  • 5 tbsp real maple syrup
  • 2 small eggs
  • 1 tsp vanilla extract


Step 1: Pre-heat the oven to 180 degC and line a baking sheet.
Step 2: Combine the oats, flour, salt, baking soda and cinnamon together in a small bowl.
Step 3: In a large bowl, using an electric mixer, beat the butter and sugars on high until pale and fluffy.  Add the maple syrup, egg and vanilla extract to the mixture and beat, scraping the side of the bowl as needed.  Add the oat mixture and stir until just combined.
Step 4: If your dough is sticky put it into the fridge fo 10-15 minutes to make it easier to work with.  Drop teaspoons of the dough, 2 inches apart, onto the lined baking sheet.
Step 5: Bake for about 10-12 minutes or until the edges are golden.  Let the cookies cool on the baking sheet for a few minutes until set then move them to a wire rack to cool completely.
